Megan's Lemon Short cake


I have never met Karen but we have become
friends over the net,
she has a wonderful website with awesome recipes and
this is one of them that I attempted to make

it's called
I guess she got it from Megan
you'll have to trot on over to Karen's blog to
read about it

In a food processor pop in:
  • 1 cup flour
  • 100g butter
  • 1/4 cup icing sugar
  • Mix until crumbly; don't wait for it to combine.
  • Press into a loose based flan tin.
  • Fan bake 180oC 15 mins.
  • Mix in a separate bowl:
  • 1 cup castor sugar
  • 3 Tbsp flour
  • Add:
  • Rind of 1-2 lemons; grated fine
  • 1/3 cup lemon juice
  • 3 beaten eggs
Pour over pre-cooked base in the oven (word of warning don't move the base or the lemon/egg mix will drip out) & fan bake at 180oC for another 15 mins.

Sprinkle with icing sugar to serve.

ok why does mine look so different?

there's a story to it and I hope my husband isn't reading my
blog because this one is all his fault but I love him to death
and I think I've forgiven him.

I was making the above recipe for a card night
2 weeks ago, hubby asked if he could help
well don't you ladies know that when husbands
offer to help you take it!!!

So I did and I thought the easiest thing he couldn't
get wrong was to follow a recipe and finish what I had started.

My instructions to him were
"can you make up the second half of the recipe
and when the buzzer goes off follow what it says,
I'm off to clean the rest of the house that
the card makers might go visit"

...that was a load off my mind, or so I thought

I hear the buzzer go off and I wander into the
kitchen just in time to see him lift up the bowl
of mixture and lose control and the bowl flies out
of his hand and onto the floor

...............insert expletives here...........real bad ones from me

I did not know mixture could fly so far and so high

2 weeks later I am still finding hardened mixture
of lemon, sugar and eggs all over the vicinity of the kitchen.
The day after the 'accident' the kitchen smelt of eggs.

I've forgiven my husband and I still love him...only just
needless to say I haven't attempted to make this recipe again
I am still traumatised by it

So what you see is the shortbread offerings that came out of the oven
and I must say it makes good shortbread but I would leave it
in the oven for the rest of the 15 mins

It's a really nice recipe, you should try it!!

Friands


My neighbour Rowanne makes these lovely Friands
hers are on the white place
mine are in the pan

My friend Ellen asked me for the recipe and I told her
it was on my blog, then suddenly remembered
I didn't put it up so I am hastily loading it up
hoping she will not go into my blog before I have it up
hee hee

Preheat oven to 180° C

185g melted butter
1 cup (125g) almond meal
6 egg whites
1 1/2 cup (240g)icing sugar
1/2 cup (75g) plain flour
35 g fresh raspberries or frozen
35 g fresh blueberries or frozen
(I actually put in 50g each of the fruits)

Mix everything together except fruit with a wooden spoon
Spoon mixture into oiled friand pans filling each
section half full
This recipe will make 12 friands
Divide fruit evenly and poke into mixture

WARNING: if you mix the fruit into the mixture
then you will get a pink mixture, that is why you
put the fruit in last

Bake in moderate oven 180° C for 25 minutes or until cooked
Remove from oven and let cool in pan

Variations: 2 tbsp poppy seeds and grated rind of 2 lemons
orange or mandarins can be added to the dry ingredients
If using citrus in the mixture, a glaze of melted marmalade
can be brushed on the cooked friands whilst they are
cooling.

(never let the husband mind the oven, he took the friands out
and didn't see that it wasnt cooked so I had half cooked friands)

Chocolate/Coffee Friands
(I forgot to take a photo of them...sorry)

250g Icing Sugar
100g plain flour
125g ground almonds
180g melted and cooled butter
6 egg whites
100g dark chocolates finely chopped
2 tbsp instan coffee dissolved in hot water

Preheat oven to 180° C

In a medium bowl combine, sugar, flour, almonds, butter and egg whites
Mix well until all ingredients are combined

Pour dissolved coffee into mixture and mix well

Oil friand pan and spoon mixture in and top with chopped chocolate

Bake for 20 mins or until cooked
Remove from oven and let cool in pan
